Carrot soup

1 tbsp veg oil 1 onion sliced 450 g carrots, sliced 1 tsp ground coriander 1.2 litre veg stock bunch chopped fresh coriander

Heat oil, cook onion + carrots for 3-4 minutes until softened Add ground coriander, stir, cook 1 minute Add vegetable stock, bring to boil, cook until vegetables are tender Blend!!

Add fresh coriander when serving
