2 tbsp peanut oil / oil, heat leeks chopped 1 carrot chopped, fry for 2-3 minutes 2 garlic cloves chopped, fry for 2-3 minutes too
Add 750 ml water or chicken stock Add 2 tbsp soy sauce Salt, pepper
Simmer for 15-20 minutes
In the meantime
- slice chicken breasts
- slice boiled eggs in 2
Drain stock into another pan
In the new pan, cook at low heat for about 7 minutes

Remove chicken and mushrooms, add noodles
Once cooked put noodles in bowl, add stock, then mushrooms, chicken, egg, and sliced spring onions
